Then wazwan is your one stop. So catch the next flight and head to the Switzerland of India, the spectacular valley of Srinagar and walk in a wedding or celebration. I promise you that the natives will be more than happy to serve you. The Vale of Kashmir has been attracting people from different corners of the world not only for its charm, beauty and tranquillity but also for its mouth-watering, delicious and spicy dishes and cuisines. The hidden secret lies in the variety of hot spices like cardamom, ginger, fennel seeds, cinnamon, black cumin and so on. They are popular because of their appealing flavour, texture, and palatability characteristics. They form an inextricable part of Kashmiri culture. The names of the dishes and their bountiful, spice-rich sauces tell us a long history of influences. The infusion of tradition and culture lead to a beautiful amalgamation of dishes. The methods of cooking are borrowed and mixed Iranian, Afghan and Central Asian practices. Wazwan (Kashmiri: وازِوان) is a multi-course meal in Kashmiri cuisine, the preparation of which is considered as an art and a point of pride in Kashmiri culture and identity. Almost all the dishes are meat-based using lamb or chicken with a few vegetarian dishes. Recently, Wazwan is also served internationally at Kashmiri food festivals and reunions. From wedding celebrations to memorials commemorating the 40th day after a family member’s death, the wazwan feast forms an integral part of family gatherings in Kashmir and leaves a person mouth-watered if sniffed from a distance. The credit for popularizing wazwan dishes goes to Persian and Sanskrit immigrants. The word wazwan is derived from two words, ‘Waze’ means a Cook and ‘Wan’ means a place where the cook cooks. The origin of the term has also been derived from a Persian word, ashpaaz, which means a special cook proficient in making soups, and with the passage of time the term became “Waza”. Wazwan is an art and is learnt through heredity only. It is rarely passed on to other persons outside the clan. It is an integral part of the Kashmiri culture and heritage. The availability of the Waza determines the marriage schedule of weddings. A week or two before the function or ceremony chief cook is hired to discuss the quantity and quality of rice, meat, spices, chicken, vegetables and other items of cookery. The whole wazwan is cooked on wuri, firewood stove-train, in large and small copper cauldrons, locally called Daeg and Degchi. It consists of thirty-six meals, fifteen preparations of meat are cooked overnight under the guidance of a head chef called Vast Waza who is assisted by other cooks. The basic prerequisite of a wazwan is that freshly slaughtered meat is used for its preparation. It also contains a lot of dry fruits and spices which are freshly homemade. The red colour is usually derived from either the Kashmiri chillies or Cockscomb flower called Mawal. The feast is so opulent that each platter customarily gets piled with 8 to 13 pounds of meat and can take more than two hours to eat. Waste is out of the question. Many wazwans end with doggy bags and guests angling to take away more of their favourite dishes. The process of serving begins with washing hands of guests by providing water to them by a copper jug and a basin, called Tash Naer. After that, Dastarkhan, Table Cloth is spread on the floor which serves as a sanitary surface for food and groups of four people sit around it. A sizeable circular dish, traem, with a mound of rice with different varieties of wazwan on it is served to each group. Then, Waze takes rounds with copper cauldrons and a ladle to serve the additional dishes one by one. Meanwhile alongside, salad, curd, water and soft drinks, and pulao are served. Along with these dishes curd, pickle and chutney made of walnut, onion, pumpkin, radish etc. are served in small pots. They say variety is the seasoning of life. Some of the main dishes of this extravaganza spread are: Rista These are meatballs served in fiery red gravy. Each Traem consists of 4 Ristas one for each person. They are made by boneless meat which is smoothened on a wooden mallet and often have meat fat which is added while the meat is smoothened. The perfection requires extraordinary skill Lahabi kabab or Moachi kabab Succulent skewered lamb kebabs which are flattened, given diamond-shaped and cooked in spices and yoghurt. Waza kokur (two halves or two full chicken cooked whole) Daeni phoul (mutton dish) Doudha ras (mutton cooked in sweet milk gravy) Rogan josh Lamb which is marinated at least 2 hours before is cooked in oil and Kashmiri spices, the colour of the dish comes from Kashmiri Red Chillies added to it. Methi Korma It is a sort of stew usually made with lamb stomach and flavored with methi or fenugreek leaves which adds a lovely unique flavor. This flavored gravy is very famous amongst Kashmiris and part of the extensive meat cuisine of the region. Tabak maaz It is a glossy meat made of lamb ribs that are cooked twice and then simmered in yogurt with spices till tender. It’s then fried thoroughly and served in dry form. The richness of the dish is apparent with the ingredient list, it tastes absolutely fabulous and the aroma pulls you towards another bite. Daniwal korma (a mutton curry with coriander) Waza palak (green spinach cooked into a silky consistency with small mutton balls known as paliki riste) Aab gosht (lamb cooked in milk curry) A sacral area of the vertebral column of lamb or mutton is cooked in milk with saffron, cardamoms and without other spices. Marchwangan korma (an extremely spicy lamb dish) Kabab (minced meat roasted on skewers over hot coals) Gushtaba (a velvety textured meatball in white yoghurt gravy) It is the finishing dish made of minced mutton balls which are made in yogurt and spices. It is similar to Rista but less spicy and it’s aroma resembles yakhni. Gustaba is like Rista made from pounded meat emulsion. Yakh’n This dish can be prepared with lamb or lotus stem. It is a spiced yogurt based dish cooked without chilies. Bay leaves, cloves, cardamoms are the prime flavors to the dish. The mutton is cut in the form of chunks of about.5-6 cm which is pre-cooked in boiling water for 20 mins before adding the gravy of yogurt. Ruwangan chhaman (cheese squares with tomato gravy) It is cheese cooked in tomato sauce along with spices. Cheese is called Chamman in Kashmiri. Dum selva (potatoes cooked in yoghurt gravy) Dum aloo Gand Aanchaar (chopped onions mixed with chillies, salt, yoghurt and spices) Muji chetin or Mooli akhrot chutney (a sharp radish and walnut chutney) Phirni The wazwan ends with this creamy delicacy, it is a milk pudding thickened with semolina or ground rice, flavoured with cardamom and optionally saffron, set in individual bowls with slivered nuts and silver leaf Ufff, it ends finally. Horns blaring like insults, the air thick with yesterday’s heat and today’s unfinished thoughts. I light a cigarette and stare at the ceiling like it owes me answers. That’s when I reach for Dreaming of Paris. Yes. A woman’s mist. I know. But let’s be honest—some things smell like memory. And this one? It smells like hers. Not any one woman. Maybe all of them. Maybe just her—the one who looked at me like she already knew how the story ended and kissed me anyway. Dreaming of Paris doesn’t beg.     SOCIETY by Anushka Singh Prostitution And Criminalization 1 September 2020 SOCIETY Advertisement Advertisement Advertisement Prostitution being one of the major social ills existing in Indian society, undeniably is a matter of critical concern. It occurs in different forms and its legal status differs from country to country ranging from being an enforced or unenforced crime, to regulated or an unregulated profession. Reflecting differing opinions, the position of prostitution varies widely worldwide. Some believe that paid sex is so entrenched in our society that our focus must be in keeping it upright and unassailable rather than prosecuting it. While some simply perceive the idea of prostitution as a legitimate occupation, others as an institution are the supporters of ‘Nordic Model’ which makes the purchase of sex illegal but decriminalizes the act of selling it. This approach has also been adopted by various countries like Canada, Ireland, Iceland, Norway and France. The juridical position of prostitution has been a subject of grave debate during recent years. And like every debate has, sex work likewise has two ends to it which must be analysed before arriving at a deemed conclusion. The question is, should we legalise it or keep it criminal? Here is a brief to both ends of the debate. Keeping it criminal Even after legalizing prostitution with best intentions of retrenching human trafficking and criminal enterprises, some countries still suffer from illegal counterparts. For example, illegal bordellos still exist in the Netherlands, a country which legalized prostitution in 1988 and prostitutes continue to suffer abuses at the hands of the procurer. Another major argument is, prostitution promotes degrading attitudes toward women and obliquely invites violence against them. The fact that 80% of sex workers are female can not be overlooked and they are more likely to be raped or murdered than any other population because of the malicious behaviour people have towards them. And so by the necessity to protect and save themselves, either from physical harm or destitution, an enormous female contingent of female sex workers fall out of option and throw themselves at the mercy of the men they serve. Cruelly, society often blames women for the violence against them, theorizing how she must have brought the trouble on herself. The only way to combat such attitudes and realities is to increase legal measures against who perpetuate the prostitution industry. Legalizing it Criminalization of prostitution leaves sex workers on the fringes of society, making them vulnerable to violence, poverty and health issues whereas legalization bypasses the most dangerous aspects of prostitution. Decriminalization also allows sex workers to get help from police in incidences of violence. Also, it provides them access to social security and public health care. It has been noted that sexually transmitted infections are statistically lower in areas where prostitution is decriminalized. Legalization also helps to concede that consensual prostitution has a victimless nature. The internet bristle with the testimonials of sex workers evincing their consent on having a career in sex. Along with manifesting their assent, these personalities have also stated the disparity between themselves and those who are browbeaten or compelled into this social evil. Even if the ethical framework of prostitution is not clear, society should avoid binding sex-trade which as a reaction does not harm individuals or the society itself. The ultimate line In either way, prostitution remains to not be an ascendant practice as there are so many prospects and the presence of both willing and unwilling individuals dealing through discrete circumstances, finding their way out somehow. Everyone needs rest and at times the best way to love yourself and be kind to yourself is to take a break and rest your body, soul and mind. Let yourself recharge and get ready for days to come. Go on a little vacation or if you can’t then take some time out to read your favourite book, watch a movie, cook, bake or go for a spa! Call a Friend – At times all we need is to call someone and vent all our troubles out and that’s why, when in doubt you go call your best friend. Friends can always hype you up and make you feel like you are on top of the world. Calling someone also helps you solve a lot of issues and helps you realise your self worth making you feel loved and appreciated. Just pick up your phone and call or in Sam Smith’s words “I’m only one call away, I’ll be there to save the day.” Give yourself a pep talk – “Hey you! You are stunning and beautiful!” Pep talks are essential especially on a low day. Instead of counting all the flaws in you, celebrate the good in yourself. Practice the art of pep talks; go stand in front of the mirror and remind yourself of how beautiful you are and how much of an amazing person you are. Take a nap – Why do you think babies are so happy most of the times? Studies have shown that taking naps can definitely make a person be energised and happy. Naps are like the super tablets that a person needs to be happy and if you are happy and energised you’ll be more kind too yourself. One nap a day will definitely make all you worries go away. Go for a walk or exercise – Go out into the world and breathe in the fresh air letting go of your worries. Walks and working out will not only keep you healthy and active but will also keep you fresh and happy. So pop in your earphones and blast some Beyoncé as you go workout or some Sam Smith for calm peaceful walks. Red Wine Pinot Noir Pinot Noir is the world’s most popular light-bodied red wine. It’s loved for its red fruit, flower, and spice aromas that are accentuated by a long, smooth finish. Cabernet Sauvignon The world’s most popular red wine grape is a natural cross between Cabernet Franc and Sauvignon Blanc from Bordeaux, France.     Cancel Culture by Akash Khatri Cancel Culture 1 November 2020 LIFESTYLE Advertisement Cancel culture, a social media phenomenon where active social media users seek to remove the clout of a celebrity who says or does something offensive by ‘cancelling’ them. Basically, the ‘cancel’ here means to cancel out or end a person’s career in reaction to his or her unacceptable behaviour or action. For instance, if there is a celebrity or any public figure who makes a misogynistic, racist, casteist, or sexist statement or commits an act of sexual crime, there could be calls to boycott the actor’s films and other works, exile him or her from all public events and disconnect the person from all the social alliances. As a result, the person is ‘cancelled’ culturally, socially, economically and politically. There are two types of cancel culture, first one a call-out culture. Here, the responsible individual is mortified publicly on social media for his or her statements and the resulting outcry hold them accountable for their fallacy. The second variant is more serious. Here, the celebrity is called out on social media and a larger mass boycotts his or her products or services, eventually bringing a full stop to their careers. Most of the times it gets much wider and substantial or controversial but the immense recognition cancel culture enjoys, especially among teenagers and young adults, makes it one of the most controlling movements in recent times. One of the main critiques of cancel culture is that it’s making people more bigoted, quick to judge and banish those who even slightly disagree with them. Cancel culture doesn’t leave any room for constructive discourse because social media users often deliver a quick decision, based on a snap judgment, to a celebrity they view as offensive — leaving no opportunity for them to put forward their explanation on their act and make their case against their own ‘cancellation.’ But people tend to forget — whether a celebrity is canceled or not, it is up to the celebrity themself, not on those wanting to cancel them. Though targeting someone will not just affect them, but their mental health and the livelihood of many related to them, and that’s not just. However, ending someone’s career completely is easier said than done. Not many entities have had their careers completely shut down due to the negative views on the internet. Actor and activist Jameela Jamil, has said that this phenomenon is a “pointless waste of time.” But, then again, the term is utilsed among so many, that to figure out if the phenomenon is negative or positive have been made indistinct. The principal questions are: Has social media simply given another name to something that is going to exist for a lifetime? Does this phenomenon really exist when cancelling someone doesn’t mostly work forever? Does the idea of being cancelled stop awful content? Or is it just another trend that is being followed blindly?
