So I decide to move on with it.” Laughing over all of the jokes she gracefully said, “Knowledge is the key to every action of your life. Thus education is must.” In continuation she added, “I perused Master of Arts in Psychology, giving me liberty to understand people around observing artists around simply driving the motivating force within to act and become a model. There were no definite plans; it was just that I finally found what I am born for!!” The firm belief that she has in evolution of ideas from childhood to adulthood simplifies life when she exclaims, “It’s not necessary that all that we aspire to become as a child falls in our way like flowers in the path of Buddha! Those aspirations are going to change and we should welcome all our might because we do it for our personal profits!!!” Finding this thought queer and willing to converse about the numerous shifts it always wonderful to exaggerate the way she simply juggles between work life and personal life. To comment on which she put across the thought, “When I am active with my closed ones, I have the ability to survive a sinking ship. Soniya on the other hand, stands staunch in the industry today, neither has she had any Godfathers in the industry nor does she have any family member reaching the industry. In these circumstances in her accordance, there is always a need to have someone surrounding a fresher to support. The need arises from the past events of her life. She never had anyone to guide her way through to what acts to perform or work to look for, she had no option other than to work however talking about this day she knows the alternatives with all ends due to the life events, mistakes as well the success that she has achieved. Thus reinforcing, “The industry of films and theatre is an extremely difficult one to survive in!” However, only a fighter can survive through when one keeps struggling even when she has projects in hand because the fate can never be trusted, she might end up with zero projects one morning unknown of where to begin from or sometimes just clueless of audience’s approval of the work performed. I believe in tackling such negative outbursts on meeting the critic rather than just a distinct criticiser who I probably would never even meet because that man sitting in some random corner of another city has no clue regarding my life. Particularly that is why for me, fashion is something that is classic and unique to me but also at the same time comfortable for me rather than revealing attire wore to impress the audience largely.” The simplicity with which she spoke about all of it is very similar to the simplicity with which she enacts a character. These characters have different underlying psyche, to acquire a role of those, she never utilises any substance that might justify the character however impact her negatively. Thus for her all roes hold equal importance and never does she take back the role with her. Kaveri Priyam On Making Her Childhood Dream Come True by Anushka Sharma Kaveri Priyam On Making Her Childhood Dream Come True 13 March 2023 COVER STORIES Advertisement In a candid interview, Kaveri Priyam tells us that she had absolutely no idea about how to start working in the industry! All she was clear about was getting herself enrolled in an acting institute and continuing her theatres. Afterwards, she came to know about the auditions happening in Aram nagar and without the knowledge of the do’s and don’ts, she simply started giving them! Slowly, she started learning the various things about the industry and as it was a long process, she had the opportunity of experiencing the ups and downs, the rights and wrongs and helping herself when needed which further helped her to sustain in the industry. Kaveri says that it’s all those initial years which are helping her to support herself till date. She tells us that her experience was very good apart from the times when casting directors asked for money or when they tell you that you are not the appropriate shape or size or colour for this industry. She said that for some time she even took these comments on herself and tried to work in accordance with them but eventually she realised what was good for her and what was not. Kaveri says, “Working in the industry has always been very fun. Touchwood, I have been very lucky because I got the opportunity to work with very lovely people who never made me feel that I was a newcomer in the beginning.” As a child, she always wanted to become an actor. She says she was a born drama queen and was always a part of extracurricular activities. She says she has been lucky to have a good support system; good teachers who were very proactive and her mom, who got her enrolled in various classes. Straight after school, cycling daily to her Kathak classes was extremely hectic but she really enjoyed the part where she used to be on the stage. She used to act, direct, write stories and enact them with friends which unknowingly turned out to be street plays and attract a lot of crowd on the spot. She says that as a child you would think that you are just doing all this for your playtime fun but gradually she realised that she really liked doing all of it by heart. That’s when she decided to become an actor. Despite having a studious family and mindset she realised she didn’t really enjoy it all, and acting was actually what she truly wanted to do. The day she got rejected from one of the exams was her turning point. Thus, she started giving auditions, doing theatres in Delhi and finally she got selected for a show and came to Mumbai. The show didn’t work out well but it brought her to the place where she belonged! Talking about her upcoming projects she tells us, “I am super excited for my upcoming show which is going to air on Sony Sab very soon. The name is ‘Dil diyan Gallan’ and as the name suggests, it’s Punjab based story. So I am looking forward to it, playing a new character, getting into someone else’s shoes. I am super excited for it and also for my new music video which is going to be released soon.” Kaveri speaks about what she loves the most about acting and she said, “I love the way it takes you to different places, makes you meet a lot of different people and the way it helps you grow as a person and an artist. When you work with amazing people from different walks of life, you get to know more about life in general, about different people who exist in the society and with each character you get to be in someone else’s shoes. I believe an actor is someone who can live a thousand lives, which is something really attractive and I literally live to do this. I live to live different characters, different lives, visit new places, locations and meet new people and work with amazing directors and producers. So yes, that is what I feel life is, it should be exciting every day.” We asked her where does she see herself in the next 5 years in this ever-changing entertainment industry and she answered, “I know that this industry is ever-changing and I think nothing is permanent and change is the essence of life so I do not fear change, all I expect from myself is that I adapt to the change, adjust and keep entertaining people. In the coming 5 years I see myself as someone who knows all the tricks and trades of my field and then maybe later I can decide on what sort of work I want to do in the industry. I want to progress, that’s for sure.” Apart from being the character, she thinks, to look like the character is a challenging job. If the character is plumpy, extremely thin or ranky, it is something which takes a toll on your health because there is a limited amount of time in which an actor has to look a certain way and if not followed under proper guidance, it might hamper your health. She says that it’s not particularly tough but extremely challenging, and especially for her as she is a big foodie. But, as of now she hasn’t got the chance to completely transform herself and she does look forward to doing such roles in the future. Kaveri speaks candidly about the pressure in her work and what she does to tackle it, to which she simply said that she, personally, never really had to deal with any such thing. “If you enjoy doing something and can feel that it is meant for you then, that’s it. There is pressure in every other sector and I think that it is a part of work and it should be taken lightly. There is this constant thought that should be there in your mind that you are getting to do what you always wanted to, and so, it is a blessing. There are certain schedules you have to adjust yourself in but that is the fun and challenging part of it which makes it exciting.” About her journey and the obstacles, she tells us that, “Wherever I went to take acting classes, I was always told that I am gifted, which I didn’t understand at that time, but, slowly I got to know that some things are actually there within me but they need to be polished. To convert the talent into skills, the theatres and acting classes helped a lot. Talking about the journey, initially it was tough as you are exploring new things but once you cross that phase, get a break, get appreciated, gain the confidence then things become a little easier. Although competition is there, you have to be determined, focused, keep working on your craft and that is how one succeeds in any field. It has not exactly been a roller coaster ride but, I had my own challenges which I overcame. One of the challenges was that I was overweight for this industry but I decided I wanted to look good on camera and I made that transformation for my first show, from being a very plumpy to a very thin and lean girl. I won't call it an obstacle, but just a part of the job.” For our readers who may not be as familiar with her line of work, she says, “ Be it any industry, there are all sorts of people so, telling someone that this or that industry is not good, is baseless. Meeting, approaching and having the right circle of people around you is very important to achieve anything in life because there has got to be someone who shows you the path and the right direction. Maybe you will find it on your own or someone from your near and dear ones will guide you, but that direction is very important otherwise you might just be all over the place.” Be it any industry, move forward, stay focused, go in the right direction and make sure you meet the right people. In the last two decades, we have seen people dining out more often for a change from home-cooked meals. But in recent times, there’s been a gradual shift to ordering food at home and an increase in take-out options. Moreover, the Covid-19 pandemic changed the complete economics of food and restaurant businesses. While dine-in trends will continue to exist, the industry is focusing a lot more on food deliveries. With just three ingredients – a great menu, a kitchen space, and smart packaging, you can create and run a successful cloud kitchen. Its simplicity and low-cost model have pushed hundreds of people over the last two years to jump onto the bandwagon. The domestic cloud kitchens market is expected to grow from $400 million in 2019 to $2 billion by 2024. Cloud kitchens are leading from the front to bring about this change. Unlike a restaurant with a great dining experience where people go for the service and ambience, a cloud kitchen’s only value is its food. So, the food on the menu is the most important ingredient of a cloud kitchen, and not working on the product well enough and creating a good menu will most certainly not work. Cloud kitchen owners should work on their food to make it stand out. They should master the recipe and find a niche over their competitors. Cloud kitchen rely on their delivery and take-out format For cloud kitchens to be able to sustain, they need to keep their costs low. They must be careful not to spend too much money on packaging. The cost of packaging for cloud kitchens should not be more than 5 per cent of total expenses. Kitchen experts suggest that the cost of goods sold should ideally be around 25 per cent of total costs. Although food packaging is one of the most important parts of a cloud kitchen, one has to ensure that the packaging ensures safe travel of the food from the kitchen to the consumer, while also offering hygiene and taste. Packaging is also a great way to market your cloud kitchen The biggest mistake that cloud kitchens do is operating 6-7 brands from one location. When there are 10 different cuisines in one kitchen, the manpower has to be trained specifically. The equipment used for one cuisine might not work for the other. That’s why a lot of cloud kitchens have a problem making money. Being particular about locations can be a bad decision as Profitable cloud kitchens can flourish even in tier 2 cities more than in fancy urban hubs. So, what’s fuelling this growth in cloud kitchens? In India, a person on an average orders 6-7 meals per month at home, which is far lower than the global average of 16 orders a month. Hence, the scope to expand this segment is huge and it is important that those looking to start a successful venture or business capitalise on this opportunity. Ahsaas Channa Talks About Her Mother Being The Inspiration Behind Her Career by Aparajita Jaiswal Ahsaas Channa Talks About Her Mother Being The Inspiration Behind Her Career 3 March 2022 Advertisement In a candid interview with Manya Vadehra, Ahsaas Channa (actor) talks about acting in movies, television, and digital web shows. From Jugaadistan to shooting for Hostel days season 3, she gives us some worth noting down “deets” from her upcoming projects. She is a passionate actor and believer. Ahsaas Channa was born and brought up in Mumbai. She started her career as a child actor in films such as Vaastu Shastra and Kabhi Alvida Naa Kehna, where she stepped into male roles. “I was three years old and I was a very active child. Anytime there was any scene playing on TV, I used to remember all the lines, and for a three-year-old to remember all the lines was kind of weird and it catches a lot of eyes. So, my mom noticed this, and she realized that I might do well if I start acting and she put me for auditions. I had auditioned for Vaastu Shastra, which was my first film, and for the part, they had wanted a boy because the whole film was about this boy, but they really liked my audition. So, the director requested my mom, you know, if it’s okay for me to play a boy. And at first, my mom was not very (convinced) and she had many reservations but eventually said that I was too young and she saw no problems” says Ahsaas. The film performed exceedingly well and Ahsaas was given several opportunities including advertisements. Ahsaas added “I think when I was around seven years old, my mom realized that this is it, this should stop, and I should start acting like a girl. That’s when I did Phoonk. This was my debut film as a girl.” In her acting journey, Ahsaas received several television roles such as Oye Jassie (Disney) and MTV Fanaah. “Television was great. It was a whole different experience. Honestly, I never wanted to do TV as much but at that time, I did not want to leave acting because I was studying, and a lot of things were there. So, I always made sure I did cameos on TV shows, or a Disney show that doesn’t take much time, just like a few months where they shoot all the episodes together. So, I tried to do that as much. Even in Fanaah, I had a cameo with a lead role. I think TV really teaches you a lot as an actor because there’s a lot happening. I think doing TV is the best if you don’t go to an acting school. So, I got to learn a lot from TV. I got to understand axis and lighting, professionalism, and all these things” says Ahsaas as she explains how television acting played an important and significant role in her career span. Digitally run web shows have become a new and revolutionary trend in today’s world. It has brought about novel concepts, story angles, and acting methodologies. When asked for an opinion about OTT and its difference from films and television, here is what Ahsaas had to say- “I’ve realized that there is literally no difference because everybody is doing the same thing everywhere, be it on TV or on OTT. We are all trying to tell a story and acting and becoming characters. The only difference, maybe, would be the time period; how long it takes us to shoot a web series or a TV series. I think TV takes longer, it binds you for a year or more and web series is like a month or two months at max. As it is rightly said, behind every successful person, is an inspiring story or person. For Ahsaas Channa, it is her mother. “She’s the reason I’m an actor today. She’s taught me everything. I never went to an acting school, she groomed me and worked on my craft with me. She’s also an actress and I’ve seen her act and work hard. So, she’s always been my inspiration.” While talking about her experience, Ahsaas also reveals some positives and negatives of being in the spotlight in show business. “One thing that we always need to look out for is that there are a lot of people running in the same race. They are trying to achieve exactly what you are achieving. So, the moment you lose yourself and become a little lazy, you can be taken for granted and somebody else is going to overtake. For an actor, I think there are many good things. My favourite thing is that I get to do things that I wouldn’t be able to do in real life, for example, I’ve never ever studied medical. But through Kota Factory, I was a medical student. So, an actor gets to do different kinds of things that they wouldn’t do in real life. Play different characters, be in different situations and get different kinds of experiences. I’ve never been to a hostel, but I’ve done two shows that are based on hostels. I got to live the hostel life through these shows. So, I think this is the best part of being an actor.” Ahsaas “goes with the flow” when it comes to preparing for a role. She says “I read the script a lot of times before I’m on the floor. Also, I read scenes with the writers and the directors and get their feedback”. Ahsaas does not follow a particular method to prepare for a role. She explains by giving an example- “In Jugaadistan, I’m a journalism student. I don’t know anything about journalism. I just started watching a lot of interviews, I read a bit about journalism and journalists. But that’s all. That’s the max I do. I feel like if I prepare too much then things become very mechanical.” Throwing light into her upcoming projects, here’s what she has to say about them- “ Jugaadistan is set in the college universe. The universe that I’ve already explored. But it’s still very different because we’ve tried to explore a very dark side of college and university. While it is a lot of fun, we are still exploring friendships, relationships, jugaads, and a college fest in the show. There’s a brilliant ensemble here as well and everybody has a story of their own. I’ve always wanted to work with Akarsh Khurana and when I got an offer for this, this was the first thing that caught my eye, that Akarsh is directing the show.” Ahsaas also gave details about Hostel Days season and two more upcoming projects. Pasta became an increasingly common sight on restaurant menus all across the globe, but the Italians’ love affair with pasta has a long, complex, and passionate history. While we do think of pasta as a culturally Italian food, it is likely the descendent of ancient Asian noodles, or is it? Let’s find out! Nothing says Italy like its food, and nothing says Italian food like pasta. Pasta is integrant part of Italy’s food history and immaculate culture. Wherever Italians immigrated they have brought their pasta. Pasta happens to be the staple food of traditional Italian cuisine. All kinds of pasta is made of milled wheat and water and sometimes enriched with vitamins and minerals. Italian spaghetti is typically made from durum wheat semolina. Unlike other ubiquitous Italian products like pizza and tomato sauce, which have a fairly recent history, pasta may have a much older pedigree, going back hundreds, if not thousands, of years. While unraveling the long and often complex history of this delicious and finger licking dish, we have to look at its origins and some of the myths surrounding it. Very often we come across the enduring myth, based on the writings of the 13th-century explorer Marco Polo, that pasta was brought to Italy from China, rose from being published in the ‘Macaroni Journal’ by the Association of Food Industries. Some may have also learnt that Polo’s was not a discovery, but rather a rediscovery of a product once popular in Italy among the Etruscans and the Romans, a common misconception that Marco Polo introduced pasta to Italy whereas in truth, the dish had already existed in Europe for centuries but there’s little doubt he made Westerners aware of many Chinese inventions. Italian pasta enthusiasts organized a World Pasta Conference in 1995, they celebrate Word Pasta Day every year in October, since 1998. There is also an Italian Pasta Association and a Pasta Museum in Rome. History of pasta: drying pasta toward the beginning of the 1900 There is indeed evidence of an Etrusco-Roman noodle, called lagane, made from the same durum wheat used to produce modern pasta. Lagane is where the modern word lasagna originated from. However this type of food, first mentioned in the 1st century AD, was not boiled, as it is usually done today, but oven baked. Ancient lagane had some similarities with modern pasta, but cannot be considered quite the same. The country will have to wait a few centuries for its most popular dish to make a further culinary leap forward. Like so much of southern Italian life, the Arabic invasions of the 8th century heavily influenced regional cuisine. Today, the presence of Arabic people in the south of the peninsula during the Middle Ages is considered the most likely reason behind the diffusion of pasta. Early pasta making was often a laborious, day-long process. How these early dishes were served is not truly known, but many Sicilian pasta recipes still include typically Middle Eastern ingredients, such as raisins and cinnamon, which may be witness to original, medieval recipes. This early pasta was an ideal staple for Sicily and it easily spread to the mainland since durum wheat thrives in Italy’s climate. Italy is still a major producer of this hard wheat, used to make the all-important semolina flour. By the 1300’s dried pasta was very popular for its nutrition and long shelf life, making it ideal for long ship voyages. Pasta made it around the globe during the voyages of discovery a century later. By that time different shapes of pasta have appeared and new technology made pasta easier to make. With these innovations pasta truly became a part of Italian life. However the next big advancement in the history of pasta would not come until the 19th century when pasta met tomatoes. Although tomatoes were brought back to Europe shortly after their discovery in the New World, it took a long time for the plant to be considered edible. In fact tomatoes are a member of the nightshade family and rumors of tomatoes being poisonous continued in parts of Europe and its colonies until the mid 19th century (check the history of tomato here). Therefore it was not until 1839 that the first pasta recipe with tomatoes was documented. However shortly, thereafter, tomatoes took hold, especially in the south of Italy. The rest of course is delicious history. Pasta was considered a dish for the wealthy, taking pride of place in aristocratic banquets during the Renaissance. Pasta in America Early Spanish settlers were among the first to bring pasta to America. Believe it or not, it was Thomas Jefferson that helped give pasta an initial push into popularity. During an extended stay in Paris from 1784-1789, Jefferson ate what he called macaroni back then, the word could have referred to any shape of pasta. He enjoyed the dish so much that he returned to America with two cases in tow. When his supply ran out, he sent for reinforcements via a friend from Naples. The first industrial pasta factory in the US was built in Brooklyn in 1848 by a Frenchman. Pasta Today Pasta was originally solely a part of Italian and European cuisine. With an increase in popularity on a worldwide scale, pasta has crossed international borders and is now a popular form of fast food and a staple in North America and elsewhere. This is due to the great amount of Italian immigration into Canada and the United States around the beginning of the 20th century. Similarly, the immense immigration of Italians into South Africa ensured that spaghetti with meatballs became an essential part of South African cuisine. The art of pasta making and the devotion to the food as a whole has evolved since pasta was first conceptualized. Several things that have changed drastically over time are the flavorings added to pasta. Sweetness has been replaced by savory, sugar swapped out for vegetables, which helped make pasta a nutritionally complete dish. Pasta is so beloved in Italy that individual consumption exceeds the average production of wheat of the country; thus Italy frequently imports wheat for pasta making. In contemporary society pasta is ubiquitous and individuals can find a variety of types in local supermarkets. With the worldwide demand for this staple food, pasta is now largely mass-produced in factories and only a tiny proportion is crafted by hand. He aims to be the Ultimate Super-model and is motivated by the fear of being average. “All my life, I have dared to go beyond the possible,” he said. Kian wishes to blur the boundaries between the impossible and what is possible and has coined the term #possimpossible . Kian’s favourite collaboration was with Fashion Magazine NYC. Being selected as the face of Fashion Magazine NYC was a Himalayan achievement for the actor/model. Being selected was a fruit of his hard work and was a massive milestone in his career. Having worked with many high-profile luxury brands, Kian uses various model/photographer-finding websites to gain skills and experiences. He has collaborated with multiple luxury brands such as Bentley, Vertu, Chopard, 209 Mare, Rachini, and Dolce & Gabbana, amongst many others. He was selected as the style influencer for Dolce & Gabbana. “Think of Dolce & Gabbana, and you think of sunny Sicily, small Italian villages, big Italian families and big designs,” he said. D&G is one of Kian’s favourite designers, and draws a lot of his fashion inspiration from the brand. “Part of your brand is how you present yourself, including fashion.” Kian believes that playing with shapes helps one stand out as most pants and dressed come in standard styles. Kian was scouted by one of the biggest fashion modelling agencies, Independent Management, based in Milan, Italy. Independent Management now represents him as both an agency and a mother agency. Because of his job, Kian works in both Europe and Dubai. “If I have to choose one, I will choose Europe and Milan, Italy over UAE,” he said. He chooses Milan because it is one of the top fashion cities in the world. Milan also is a significant breakthrough market for many new models, and a successful stint there has benefitted many models throughout their careers. It is “a relatively inexpensive city with a wonderful culture, amazing food, and warm people.” When asked about a fashion ritual, Kian said that he always makes sure to bring essentials. These include nude undergarments. “I believe a model appearance: skin, Hair and... always must be photoshoot ready. This means the magic happens in your daily life and lifestyle routine.” He believes consistency is the most important component while working towards your goals. Producing and film-making for Shaan doesn’t seem like a backup plan, rather a part of a bigger picture he has always seen. However, this ruthless industry makes it impossible to ignore how the system around him functions; and what needs to change. Grover doesn’t shy away from calling out what’s broken. He addresses the “dull phase” of Hindi cinema, which is now too often driven by algorithms and Instagram clout, rather than creativity or talent. He says “projects are being made; not films”, pointing to the pressure to cast influencers over actors, and spend big on star power instead of story telling. He admires and exemplifies the genuinity of Malayali and Kannada cinema, where budgets stay lean and scripts remain rooted. And while the majority of the industry chases virality, Shaan thinks it's wiser to keep the anonymity consistent, creating a mystery to the actor and roles they play, as well as truly earning a name through their craft. He acknowledges that the upcoming generation craves talent, authenticity and range, as he as well quietly works towards refining his craft, holding onto his mystery, and trusting that the right audience will find him. Moreover, Shaan’s next big dream isn’t just to act; it’s to produce the stories he’s written and build a space where new voices can thrive, he expresses with certainty, “maybe five or ten years from now; but that's the next chase” . Grover came to Mumbai with “nothing but blessings and belief”, and he hasn’t forgotten the storms he weathered. Reflecting on his career, Jitin shares that his evolution as an actor has been as much about personal growth as it has been about his diverse roles. “In one word, if I had to sum up my journey, it would be ‘enriching.’ The characters I've portrayed have taught me not only about the craft but also about myself as a person,” he shares, offering a glimpse into his reflective approach to his work. Jitin emphasizes that, for him, the genre of a project is secondary. What truly excites him is the complexity and depth of the roles he takes on. “I am more drawn to characters that are far removed from my own life. It’s an opportunity to explore new worlds and bring these unfamiliar personas to life with empathy.” He credits the directors and creative teams he works with for making this experience even more profound. One of Jitin’s latest projects, “Tribhuvan Mishra CA Topper”, available on Netflix, touches on important societal themes. “While the show is wrapped in a comedic tone, it subtly discusses issues like gender, masculinity, and how professions that are often misunderstood or stigmatized deserve the same respect as any other.” Jitin was particularly drawn to the lack of judgment in the script and was excited to work on a role that presented such important conversations in a lighthearted setting. When asked about his most cherished projects, Jitin couldn’t pick just one. He recalls the camaraderie developed over five years while working on “Bombay Meri Jaan”,particularly as the project spanned several COVID lockdowns. Another significant milestone in his career was playing a transgender character in “Kala”, a role that opened up an entirely new world for him. “From makeup to costume fittings, it was an immersive experience—both nerve-wracking and incredibly rewarding.” Despite his passion for acting, Jitin cherishes his time off with family. As an actor constantly on the move, he values the time spent reconnecting with his roots and his family in Faridabad. “It’s my way to recharge, and it grounds me,” he reflects. As for future plans, Jitin’s focus remains clear: he aims to keep learning and growing. He’s excited about his upcoming projects, including a supernatural horror film and a period fantasy drama. He also shared an inspiring facet of his life: before pursuing acting full-time, Jitin worked for nearly nine years in banking. “It was a big leap, but I’ve always known my dream was to act. Sometimes, you just have to take that chance,” he adds. In closing, Jitin revealed his admiration for industry legends Amitabh Bachchan and Shah Rukh Khan, both of whom he’s had the honor of working with. “People often say you shouldn’t meet your heroes, but in this case, you absolutely should.
