More and more people are drinking and making non-alcoholic beverages as it offers a host of benefits. Homebrewing, which is simply making beer or wine on a personal and small-scale level, is a hobby and a profession for many. The reason is, that it is high on flavour, low on alcohol, and does not require any fancy equipment. The process of fermenting and making probiotic drinks is very easy, anyone can do it. Homebrewing has become a great hobby and experiment that people are taking up in recent days. The basic idea is to brew a taste test batch of your favourite beverage at your home, be it Kombucha, Tepache, Ginger Beer, Red Table Wine, among a wide variety of options. It can be intimidating at first, but can be very rewarding, and cheap! All you really need is a big vessel, something fermentable, and some yeast. “There are a variety of beverages you can brew and once you get the basics down, it can be simple to add your own unique twist to a recipe.” A great way to start is by brewing a Hard Cider. The easiest method is crushing the juice from a batch of apples, putting it in a jug, and letting it ferment in a dark place for one to three weeks. Apple skins contain various natural yeasts, which end up in the apple juice when the fruit is pressed, but you can choose to add cider yeast which is great for fermentation. You can also add sugar and spices to enhance the taste. Another brewer’s favourite is the Kombucha, which is a great alternative to alcoholic beverages. It is naturally packed with probiotics and is made with water, tea, sugar, bacteria, and yeast. It starts out as a sugary tea, which is then fermented with the help of a SCOBY, an acronym for ‘Symbiotic Culture Of Bacteria and Yeast.’ It is refreshing, fizzy, slightly sour, and low in calories and sugar. You can ferment Kombucha for seven to ten days in a mason jar and close it shut with a tightly woven cloth and lid. Tepache is a fizzy fermented drink made from just pineapple skin, sugar, cinnamon, and water. Its taste can range from cider-like and sweet to yeasty like beer. The process is simple: add pineapple peels to a large jar, add sugar and cinnamon and drown them in water until the peels come to the surface of the jar. Let it ferment for one to three days. The longer it ferments, the less sweet and more yeast-flavoured it will become. You will know the tepache has fermented when you see many small bubbles on top. Refrigerate and enjoy your drink! A batch of Kombucha (left) and Tepache (right) kept for fermentation A sparking probiotic beverage that is very easy to make, Ginger Beer is a traditional remedy for nausea and digestion problems and is good for the throat. You will need to make a powerful fermented mixture, Ginger Bug to make this drink. The wild yeast or ginger bug is made by adding water, sugar, and finely chopped ginger to a glass container and letting it sit for twenty-four hours after stirring. Take the next two-three days to add the same amount of ginger and sugar every twenty-four hours until it becomes fizzy. Strain it and add lemon juice. Let it sit at room temperature for three to six days until it gets fizzy. Once they’ve reached that point, you can refrigerate them; but make sure you’re opening the top and burping them once a day. Ginger Beer and Red Table Wine are said to be great for health having healing properties To make a batch of Red Table Wine, add one cup of sugar into a bottle of purple grape juice, add a packet of wine yeast, pop in an airlock, and come back in a few weeks. Alternatively, you can add around three quarts of the juice to a glass jar, before adding six cups of sugar and a pack of yeast. With these amazing and easy-to-make beverages, you can start homebrewing some of your own in no time. It’s a healthy hobby and is definitely a skill that comes over a period of time. Ultimately, it will be worth all the time and effort. We had the opportunity to sit down and chat with the outgoing and busy actor, who has many movies in various languages in her kitty. Adah exudes maior 'Girl-next door' energy in her latest interview with Aparajita Jaiswal as they discussed about completing a century in the industry, internet's sensation and beloved Radha Sharma, thoughts on fashion, OTT platforms and more. How and when exactly did you realize your passion for acting? What is the best part about being an actor? Throughout my schooling I truly enjoyed acting. I had taken part in theater and plays every now and then. I always wanted to experiment and try and be something else every other day. Whatever I was wanting to become, I was very serious about it. started practicing acrobatics because I wanted to join the circus, you won't believe me. I was so dedicated and serious about it. I graduated from a Kathak course because I wanted to become a dancer. When I wanted to become an actor, once again, I was very serious about it and if I put it quite plainly, all the skills I learnt along the way have come in handy in my acting career. I can only answer it based on my opinion, to me, it is absolutely the fact that I am allowed to be different people and personalities on-screen. Everybody adores the content you and Radha give us. What do you think of Radha's popularity Everyone adores Radha because she is the star-kid Radha Sharma. She is the first stuffed pillow to have her own Instagram. I am glad people are accepting and giving Radha the attention she deserves, however, it is not because of me. People admire her solely due to her talent and multiple expressions. (laughs) You have recently completed more than a decade since your entry in the industry. How has your experience been so far and how has the industry evolved so far? How would you describe your acting? I have actually completed a century in the industry! I have this hashtag that says #HundredYearsofAdahSharma because I started with the movie 1920 and we are currently in 2021.which makes it a hundred years. So it is safe to say I have been in the field longer than most veteran actors. I don't think I have aged for someone working since 1920 (laughs) it has to be the curious case of Adah. As for how I would describe my acting; I feel very fortunate to have bagged 1920 because I was able to prove that I can perform since our debut movie really makes a huge statement. Media and audience have been very kind and welcoming to me and so was my audience. I am very grateful for all the love and support people have given throughout these years, it really makes me feel very comfortable and more crazy I guess (haha). You have a very strong fashion game. Who would you consider as your style and fashion icon? For me, fashion is something that should be fun. When you start taking it too seriously it gets stressful and then there's no fun. Fashion is a part of my life and a part of me that I truly enjoy. If I am a part of a movie then I like sticking to the essence of the character based on how the character is written. On the other hand, I enjoy experimenting and trying out something | haven't done before in the case of fashion or magazine shoots. I also feel that what attracts my attention to someone else's style is when they have an inherent style of their own. One should be able to pick a style/hair style and make it their own, it would make it fun for themselves and make them look confident. I would say rather than strictly sticking to copying 'trends' one should have and play around with fashion. I would even say, don't be afraid of making mistakes, make mistakes in fashion because what might be a faux pas today might be in vogue tomorrow and vice versa. So you do you and have fun with fashion. Tell us about the toughest part of your work? And why do you think it is tough for you? The toughest part has to be, realizing that I am able to live my dream every single day. I enjoy every part of what I am doing, be it wearing amazing clothes or being a new character. Well, posing for selfies while savoring Bhel Puri….. life is tough! (haha, serious sarcasm intended). If anything you would be asked to change about your work, what would be that one thing? I consider myself at a very good phase in my career. I am being considered for really fun roles so right now I really do not wish to change anything. I am purely grateful for where I stand now. Now that OTT platforms are gaining traction among actors, what do you feel and do you see it as an opportunity to display your work? I have had an unremarkable OTT presence. I've previously been a part of a short-film Tinday, Moh which was released on OTT platforms. I played a bipolar character in Chuha Billi and a role in another OTT release entitled Holiday. I saw that my presence in Holiday drove more attention than most movies I have been a part of did. So, I make it a point to choose series, films or short stories that entertain, because when it is entertaining the medium of release doesn't matter because people would take efforts to watch it. So far as the content is good, people are hardly impacted by the medium. Whether they watch it on their phones or in multiplexes doesn't matter as long as they are enjoying the content. Once again, since I am very experimental and fun with work I want to try it all. Why does your Instagram Bio say "Actor/crow/Cow"? Yes, because when no one is watching I can turn into them. PS: but only when no one is watching. You made your singing debut in Tamil. How did you prepare yourself for singing, that too in an unfamiliar language? I have taken Piano and Carnatic music classes since a very young age So singing came pretty much easily and naturally. Though I enjoy singing and dancing. I really believe that acting is my first love. I would like to dance and sing as well. but WITH the acting. You have worked in different regional industries as well. How has that experience been? How different is it from working in mainstream Bollywood? If there's anything the pandemic has taught us, it is that if the content is good, everybody is going to watch it irrespective of the language and medium. From my experience. realized that it lies in the vision of the director as well. I have made a mark in the South Indian industry. My movies are also dubbed in Malayalam. I've been a part of Punjabi music videos. I see myself working in other regional movies as well. I am a part of an international action film which I am quite excited about. I am excited to try out all Indian languages and I would give foreign languages a chance as well. How do you prepare yourself for a role? What attracts you to a role now? It depends from role to role. Each role has its individual preparation needed. For instance, for my role in Commando, I was expected to speak Hindi with a Telugu tone to it, so I had an accent coach train me and for action movies I train accordingly. As for my South Indian movies, I like to read and reread and go well prepared to set since it is an unknown language. I like to read for my roles beforehand and go to set well prepared. It can be really stressful to receive lines on set. What attracts me to a role is something I haven't done before. What is next for you? Anything you can talk about? Any new movies in the talks? I have finished two Telugu films, one of which is a Girl action movie and the other movie is a sweet love story directed by Telugu actor Nani's sister Deepthi. It is produced by Nani as well. There is Commando 4 where I reprise my role as Bhavna Reddy once again. She is funnier and there's more action. I will also be seen in 'Aisa Waisa Pyaar' where I play the role opposite a dog named Happy. It is a lovestory between a dog and a cynical bitch. I really enjoyed playing it. There is Holiday 2 too. slated for release. There are few more in the works, but I am keeping fingers crossed for everything to work out. If you see yourself working with a celebrity, who would it be? I do not hold dreams because if I do that and it isn't fulfilled then I am bound to be re-born similar to Shah Rukh Khan in Om Shanti Om and become an actor once again and fulfill it in that incarnation. I just hope amazing filmmakers wake-up someday and say I wish Adah would sign our films. That's my dream! You recently played the role of a transgender person in "Pati, Patni aur Panga'. How challenging was it to you and what measures did you take to prepare for the role? 'Pati ,Patni aur Panga' is a very sweet love story and I hold it very dear to me. I was attracted to the role and the film because as human beings we tend to jump into conclusions and to make hasty judgements without knowing the entire story. So, it is a film that taught us not to be judgmental, which is a very earnest thought. Could we ever get a chance to see you working in Hollywood? Does that interest you? Like I mentioned earlier, one may never know. So catch the next flight and head to the Switzerland of India, the spectacular valley of Srinagar and walk in a wedding or celebration. I promise you that the natives will be more than happy to serve you. The Vale of Kashmir has been attracting people from different corners of the world not only for its charm, beauty and tranquillity but also for its mouth-watering, delicious and spicy dishes and cuisines. The hidden secret lies in the variety of hot spices like cardamom, ginger, fennel seeds, cinnamon, black cumin and so on. They are popular because of their appealing flavour, texture, and palatability characteristics. They form an inextricable part of Kashmiri culture. The names of the dishes and their bountiful, spice-rich sauces tell us a long history of influences. The infusion of tradition and culture lead to a beautiful amalgamation of dishes. The methods of cooking are borrowed and mixed Iranian, Afghan and Central Asian practices. Wazwan (Kashmiri: وازِوان) is a multi-course meal in Kashmiri cuisine, the preparation of which is considered as an art and a point of pride in Kashmiri culture and identity. Almost all the dishes are meat-based using lamb or chicken with a few vegetarian dishes. Recently, Wazwan is also served internationally at Kashmiri food festivals and reunions. From wedding celebrations to memorials commemorating the 40th day after a family member’s death, the wazwan feast forms an integral part of family gatherings in Kashmir and leaves a person mouth-watered if sniffed from a distance. The credit for popularizing wazwan dishes goes to Persian and Sanskrit immigrants. The word wazwan is derived from two words, ‘Waze’ means a Cook and ‘Wan’ means a place where the cook cooks. The origin of the term has also been derived from a Persian word, ashpaaz, which means a special cook proficient in making soups, and with the passage of time the term became “Waza”. Wazwan is an art and is learnt through heredity only. It is rarely passed on to other persons outside the clan. It is an integral part of the Kashmiri culture and heritage. The availability of the Waza determines the marriage schedule of weddings. A week or two before the function or ceremony chief cook is hired to discuss the quantity and quality of rice, meat, spices, chicken, vegetables and other items of cookery. The whole wazwan is cooked on wuri, firewood stove-train, in large and small copper cauldrons, locally called Daeg and Degchi. It consists of thirty-six meals, fifteen preparations of meat are cooked overnight under the guidance of a head chef called Vast Waza who is assisted by other cooks. The basic prerequisite of a wazwan is that freshly slaughtered meat is used for its preparation. It also contains a lot of dry fruits and spices which are freshly homemade. The red colour is usually derived from either the Kashmiri chillies or Cockscomb flower called Mawal. The feast is so opulent that each platter customarily gets piled with 8 to 13 pounds of meat and can take more than two hours to eat. Waste is out of the question. Many wazwans end with doggy bags and guests angling to take away more of their favourite dishes. The process of serving begins with washing hands of guests by providing water to them by a copper jug and a basin, called Tash Naer. After that, Dastarkhan, Table Cloth is spread on the floor which serves as a sanitary surface for food and groups of four people sit around it. A sizeable circular dish, traem, with a mound of rice with different varieties of wazwan on it is served to each group. Then, Waze takes rounds with copper cauldrons and a ladle to serve the additional dishes one by one. Meanwhile alongside, salad, curd, water and soft drinks, and pulao are served. Along with these dishes curd, pickle and chutney made of walnut, onion, pumpkin, radish etc. are served in small pots. They say variety is the seasoning of life. Some of the main dishes of this extravaganza spread are: Rista These are meatballs served in fiery red gravy. Each Traem consists of 4 Ristas one for each person. They are made by boneless meat which is smoothened on a wooden mallet and often have meat fat which is added while the meat is smoothened. The perfection requires extraordinary skill Lahabi kabab or Moachi kabab Succulent skewered lamb kebabs which are flattened, given diamond-shaped and cooked in spices and yoghurt. Waza kokur (two halves or two full chicken cooked whole) Daeni phoul (mutton dish) Doudha ras (mutton cooked in sweet milk gravy) Rogan josh Lamb which is marinated at least 2 hours before is cooked in oil and Kashmiri spices, the colour of the dish comes from Kashmiri Red Chillies added to it. Methi Korma It is a sort of stew usually made with lamb stomach and flavored with methi or fenugreek leaves which adds a lovely unique flavor. This flavored gravy is very famous amongst Kashmiris and part of the extensive meat cuisine of the region. Tabak maaz It is a glossy meat made of lamb ribs that are cooked twice and then simmered in yogurt with spices till tender. It’s then fried thoroughly and served in dry form. The richness of the dish is apparent with the ingredient list, it tastes absolutely fabulous and the aroma pulls you towards another bite. Daniwal korma (a mutton curry with coriander) Waza palak (green spinach cooked into a silky consistency with small mutton balls known as paliki riste) Aab gosht (lamb cooked in milk curry) A sacral area of the vertebral column of lamb or mutton is cooked in milk with saffron, cardamoms and without other spices. Marchwangan korma (an extremely spicy lamb dish) Kabab (minced meat roasted on skewers over hot coals) Gushtaba (a velvety textured meatball in white yoghurt gravy) It is the finishing dish made of minced mutton balls which are made in yogurt and spices. It is similar to Rista but less spicy and it’s aroma resembles yakhni. Gustaba is like Rista made from pounded meat emulsion. Yakh’n This dish can be prepared with lamb or lotus stem. It is a spiced yogurt based dish cooked without chilies. Bay leaves, cloves, cardamoms are the prime flavors to the dish. The mutton is cut in the form of chunks of about.5-6 cm which is pre-cooked in boiling water for 20 mins before adding the gravy of yogurt. Ruwangan chhaman (cheese squares with tomato gravy) It is cheese cooked in tomato sauce along with spices. Cheese is called Chamman in Kashmiri. Dum selva (potatoes cooked in yoghurt gravy) Dum aloo Gand Aanchaar (chopped onions mixed with chillies, salt, yoghurt and spices) Muji chetin or Mooli akhrot chutney (a sharp radish and walnut chutney) Phirni The wazwan ends with this creamy delicacy, it is a milk pudding thickened with semolina or ground rice, flavoured with cardamom and optionally saffron, set in individual bowls with slivered nuts and silver leaf Ufff, it ends finally. It has made me understand the power of cinema and how beautiful it is. I’m so grateful that I’m part of cinema. Also, I feel it’s beautiful how language changes the flavour of people. Every language has a different sense of humour and different ways of telling stories but one thing that unites cinema is that one ‘camera’ that we act for and that one ‘action and take’. It’s magic that happens and that’s what makes us alive. I am so grateful I’m part of the cinema.” Shriya Saran speaks about her experience working with Ajay Devgn, one of Bollywood’s gems and a legend. “With Ajay Devgan, I have worked in Drishyam 1, Drishyam 2 and RRR. Thankfully with Krishna’s blessings, they have all been very big hits. It was a pleasure working with someone as trained and as articulate as he is. He lights up the camera, he lights up the screen and he’s a very giving actor. He speaks with his eyes and expresses so beautifully with his eyes. He’s a wonderful actor. I feel like it’s about the pressure that you put on yourself today. Today, I’m very respectful of my body and I love what my body has done for me. I’m very grateful for it, I’m very grateful to Krishna for my body and for my health. I’m moving towards being healthy, doing a lot of yoga, dance and kathak. It’s more about competing with my own self and being a better version of myself than trying to look like somebody else.” Therapy for mental health issues amongst men and women in today's age and climate is a must and a rising issue. Shriya Saran comes forward to speak more about it. “I think that it is very interesting that mental health is being addressed, thanks to a lot of people. Somebody who really came forward and spoke a lot about it is Deepika Padukone and then Alia Bhatt’s own sister spoke about it. I was talking to Ishaan and his wife spoke a lot about it. So, a lot of people who talked about it were more honest about what they were feeling before it was supposed to be not cool to talk about it but now it’s more normalized and I’m very grateful to all the beautiful people who came out and spoke about mental health.” Shriya Saran also talks about women empowerment and how it should be about equality more than anything else. “I think women empowerment for me is all about getting equal rights for women and men and respect. Just giving us equal opportunities and actually stop asking questions like ‘How will you work now that you are with child?’ Or ‘How will you work now that you are married?’. Just creating a space which is very favourable and easy for women to work.” Women empowerment means strengthening women with all the rights of social, economic, and educational needs. It is to create an environment having no gender inequality for women. It is to empower them with equal rights in the family, society, community, and workplace. Everyone loves seeing Shriya and her relationship with Radha on her Instagram. She speaks very fondly of her as she says, “‘The mother’ has changed everything in me. Radha is everything to me.
